Eggplant with Garlic Sauce


Eggplant with Garlic Sauce


2-3 medium eggplants
1 green bell pepper
1 red bell pepper
1 small sliced onion
2 TBSP olive oil
3 TBSP oyster sauce
4 TBSP hoisen sauce
2 TBSP soy sauce
2 TBSP red wine vinegar
2 cloves garlic finely diced
2 TBSP chili sauce with garlic

Cut eggplant into cubed slices and boil for 1 minute. Drain and set aside
In a wok, stir fry the rest of the ingredients, then add eggplant.
